Nouel Estrella is originally from Dominican Republic and grew up partly in her home country and spent many years living in Haiti and France. While residing in Paris, she loved eating out at restaurants and her favorite dish was L’Entrecôte. The French word entrecôte translates as between the ribs, and that is certainly where this cut comes from. An entrecôte or rib-eye steak is one of the tastiest steaks that any restaurant can offer.
L’Entrecôte restaurants are known for only having two menus. One is for wine and the other for dessert. Once you arrive you are simply asked how you would like your steak cooked and immediately brought a simple green salad with walnuts. This is followed with the second serving of steak cooked specifically to your liking and fries.
Later in life, Nouel moved to Florida and was inspired to open Miami Beach’s first French bistro in 1994. L’Entrecôte de Paris became one of the hottest restaurants on the beach for offering the delights of French cuisine in a typical Parisian setting.
For more than a decade, L’Entrecôte de Paris was located on the famous Washington Avenue in the heart of Miami Beach. Celebrities such as Sylvester Stallone, Marc Anthony, Liza Minelli, Enrique Iglesias, Chayanne and Gloria Estefan were frequent guests.
"The Secret is in the Sauce" was the restaurant’s slogan and after 13 years, Nouel decided to experience a new chapter and spend time with her family back in the Dominican Republic. She partnered with top hotels in Punta Cana to offer L’Entrecôte Nights and morphed into becoming a sought-out consultant for local restaurants and events.
In her many endeavors, Nouel knew that her business success was due to the secret sauce she invented during her years in Paris which became a corner staple of her restaurant. For many years after its closing, people continued to seek out her secret sauce. She realized she needed to take the next step and share the secret sauce that has accompanied her accomplishments for more than two decades.
She formed N&P Gourmet and Nouel's Secret Sauce was born. Her famous steak sauce made its debut and started selling online. Recently, she introduced her Dijonnaise salad dressing, the same one served at her restaurant with intentions on bringing on more secret sauces in the future.
